Fruits and vegetables are still living and breathing, even after they are cut and packaged.  Therefore their physiological requirements must be met or they will rapidly deteriorate.  In addition to managing temperature during transport, there are other technologies available to control the atmosphere and manage the natural deterioration in quality, over time, of fresh fruits and vegetables. In this paper, Zagory provides a brief overview of each system and explores the pros and cons of the various methods.

Dr. Zagory has a Ph.D. in Plant Pathology from the University of California, Berkeley and has worked extensively as a consultant to the produce industry for more than 20 years. Dr. Zagory is an internationally recognized scientist in the fields of food microbiology and modified atmosphere packaging.
